The selection

We select the best raw materials and make strict controls on the supply of each ingredient that will be necessary for our product.
 
 
 
The transformation

Through a semi-artisanal process where the manpower still has a primary role, we blend our raw materials and create our products according to the original recipe of Apulian tradition and culture.
 
 
 
Boiling

At this stage, fundamental in our production process, the products are boiled in water at 95 ° C to preserve their characteristic fragrance.


Cooking

The product is cooked at 170 ° C for about 30 minutes.
 
 
 
Cooling

After cooking, the product is cooled to room temperature to retain the properties of some of the raw materials used.
 
 
 
The packaging

After the controls on all stages of production, as a guarantee of the process, we package our products with dedicated materials to best preserve the properties and avoid the possibility of contamination.
